RECIPE OF THE MONTH
What You Need
-
1 package of diced pancetta (bacon may be used as substitute)
-
1 medium size onion; chopped
-
3-4 gloves of garlic, chopped
-
3-4 tablespoons of butter
-
1 cup of vodka
-
Olive Oil
-
One 14 ounce can of tomato puree (may use regular tomato sauce as substitute)

1 cup of heavy cream
-
1 box penne pasta
-
Grated parmesan cheese
-
Salt and Pepper

Portion Size: 4-5 Servings
This is a secret recipe by Brian Calabria.
How to Make It
Make the sauce in a large saucepan, and then add it to the cooked pasta.

Cook pancetta until brown and crispy in pan. Once done, remove pancetta and set aside. Drain grease from saucepan, but do not wipe clean.

Add butter to saucepan and melt on medium heat

Add chopped onion, garlic and a swirl of olive oil to saucepan. Sauté for roughly 7 mins then slowly add cup of vodka to saucepan.

Continue sautéing until majority of vodka is burned off and evaporated; about five more minutes. Then turn heat to medium low.

Add tomato puree and stir

Add cup of heavy cream and stir.

Add salt and pepper per taste, and some grated parmesan.

Add cooked pancetta back to sauce and stir.

Stir often so sauce doesn’t stick to pan.
Continue tasting the sauce to determine if more heavy cream needs to be added. You don’t want the sauce to taste like tomato sauce, it should be richer and light pink in color. So, add more cream as necessary.
Toss pasta and sauce together in same pot and serve with grated parmesan cheese.
Toss with Peas or cooked chicken for additional flavor and/or protein.
